Golden French Toast

Day-old brioche drinks up vanilla-bean custard, then hits hot butter for a caramelised crust. Finished with berries and a snowfall of sugar.

French toast with berries and powdered sugar

Ingredients

  • 8 thick slices day-old brioche
  • 3 eggs + 200 ml whole milk
  • 1 tsp vanilla paste + 1 tbsp sugar
  • Pinch of cinnamon and salt
  • Butter for the pan, berries and syrup to serve

Method

  1. 1 — Whisk eggs, milk, vanilla, sugar, cinnamon and salt in a shallow dish.
  2. 2 — Soak each slice 30 seconds per side — saturated but not falling apart.
  3. 3 — Cook in foaming butter over medium heat, 2–3 minutes per side until deeply golden.
  4. 4 — Serve immediately with berries, syrup and a dusting of sugar.
Kitchen tip: Slightly stale bread absorbs more custard without tearing — plan a day ahead.
