Rustic Fruit Salad

Peak-season fruit cut chunky, glossed with honey and lime so every colour shines. It takes fifteen minutes, needs no heat, and disappears first at every brunch we cater.

Ingredients

  • 2 cups strawberries, halved
  • 1 cup blueberries
  • 2 kiwis, peeled and sliced
  • 1 mango, cubed
  • 1 cup green grapes, halved
  • 2 tbsp honey + juice of 2 limes
  • Fresh mint leaves, to finish

Method

  1. 1 — Wash and dry all fruit well so the dressing clings instead of sliding off.
  2. 2 — Cut everything into generous bite-size pieces and combine in a wide bowl.
  3. 3 — Whisk honey with lime juice and pour over the fruit. Toss gently from the base upward.
  4. 4 — Rest 10 minutes so the juices mingle, scatter with mint and serve chilled.
Kitchen tip: Add bananas or apples at the very last minute so they never brown.
