Roasted meat and vegetable platter for weekly prep

Soggy meal-prep salad is a layering problem, not a lettuce problem. Dressing on the bottom, hardy vegetables next, greens on top — the jar does the rest.

The jar order that works

Dressing first, then grains and beans, then crunchy vegetables, then leaves and herbs on top with the lid. Nothing delicate touches liquid until you shake at lunch. Cherry tomatoes act as a delicious waterproof wall between layers.

The Sunday reset

Two hours: cook one grain, roast one tray of vegetables, whisk one jar of dressing, wash and spin two greens. Portion into five jars and the week cooks itself. Start with our garden greens bowl — it was designed for exactly this.

What not to prep

Avocado, sliced apple and anything fried go in fresh. Everything else — grains, roasted veg, pickles, cheese, dressings — improves after a day together.
