Two lace-edged patties smashed hard on a screaming-hot plancha, stacked with cheddar, shredded lettuce and our three-ingredient secret sauce. Better than takeaway, faster too.

Ingredients

  • 600 g minced beef (20% fat), in 8 loose balls
  • 4 brioche buns, buttered and toasted
  • 4 slices cheddar
  • Shredded iceberg, sliced pickles, tomato
  • 3 tbsp mayo + 1 tbsp ketchup + 1 tsp mustard
  • Salt & cracked pepper

Method

  1. 1 — Heat a cast-iron pan until smoking. Smash each beef ball flat with a spatula for 10 seconds. Season hard.
  2. 2 — Cook 2 minutes without touching, flip, top with cheddar and cook 1 minute more.
  3. 3 — Stir the sauce ingredients together and spread generously on both bun halves.
  4. 4 — Stack two patties per bun with lettuce, pickles and tomato. Rest 2 minutes, serve hot.
Kitchen tip: Smash once and once only — pressing later squeezes out the juices.
