Slow Tomato Soup

Tomatoes roasted until jammy, blended with sweet onion, basil and a swirl of cream. Pairs with a grilled cheese the way Sundays were invented for.

Ingredients

  • 1.2 kg ripe tomatoes, halved
  • 1 onion, wedged + 4 garlic cloves
  • 3 tbsp olive oil, salt & pepper
  • 500 ml vegetable stock
  • 100 ml cream + big handful of basil
  • Grilled cheese soldiers, to serve

Method

  1. 1 — Roast tomatoes, onion and garlic with oil and salt at 200°C for 25 minutes until charred at the edges.
  2. 2 — Tip everything into a pot with the stock. Simmer 10 minutes.
  3. 3 — Blend with basil until completely silky, then stir in the cream.
  4. 4 — Season boldly, ladle into warm bowls and serve with grilled cheese.
Kitchen tip: A pinch of sugar tames sharp out-of-season tomatoes.
